Teglia pizza was created in Brooklyn NY after a long quest seeking the best pizza al taglio (pizza by the cut) in Rome.
We introduce Teglia Pizza ("pizza in a pan") in Brooklyn using only seasonal, local and the best imported Italy ingredients.
Come on Sunday to 106th St Caracus on the boardwalk at Rockaways! Awesome live music and of course, Teglia Pizza starting at 6pm until 9pm!
Great way to utilize all the amazing tomatoes at the markets right now - TOMATO JAM. Definitely making it’s appearance on a 3 cheese spicy pepper pizza next week!
Makes 1 1/2 pints
3 1/2 pounds tomatoes chopped
1 small onion chopped
1/2 cup brown sugar
1 cup of sugar
1 tablespoon sea salt (or kosher salt)
1/2 teaspoon coriander
1/4 teaspoon ginger
1/4 cup cider vinegar
juice of 1 lemon
Put all ingredients in a 2-quart pot. Bring to a gentle boil, then reduce heat to a simmer. Cook until thickened to a jam-like consistency, about 3 hours. Transfer to sterilized glass jars and store in refrigerator for up to two weeks, or use a hot-water canning bath for 15 minutes for long-term storage.
When we boil lobster the key is really salty water, so the best place for that is the ocean! We take a huge lobster pot and fill it with water (here it’s from the Block Island Sound) and voila! You have tons of salted sea water ready for your lobsters!
This Sunday, great music line up at 106th Street at Caracus Far Rockaways! Teglia starts serving at 6pm, music begins at 4pm. Supposed to be 80s and sunny this weekend!
Ricotta + Pancetta + Asparagus + Lemon Zest
Sometimes I test out flavor combinations on smaller pizzas and make pizza tonda (pizza round). This is one that is a big hit and will be definitely be making its appearance at the Rockaways this week. Gotta see how the asparagus are in the Farmers Market, they looked great last week but its definitely getting out of season!
Super duper busy Sunday - the threat of rain didn’t scare people away (but the lure of drinks, pizza and a surf band definitely helped!)…

I know seagulls are a nuisance, but they are pretty cool to look at (clean too!). This one decided that it wanted to hang out with us on our deck while in Montauk. Kind of cute in a bird-kind of way…
I can’t seem to get enough of all the kale that is in full season right now! Russian, curly, Tuscan - it’s all amazing! So, tonight’s special pizza is Organic Chicken Sausage, Fennel, Kale & Roasted tomatoes. Topped with fresh local mozzarella & Picante Provolone. Delicious!
